*Grilled Bruschetta Chicken*


Ingredients

*4 small boneless skinless chicken Breasts
*1/4 cup Kraft sundried tomato dressing, divided in half
*1 tomato finely chopped
*1/2 cup grated cheese
*1/4 cup fresh chopped basil
**1/2 Onion chopped
**2 tbsp fresh chopped garlic

**I substituted the Basil for Tarragon (simply bc I grabbed the wrong package in the grocery store...oops)

Steps
*NOTE*- This recipe is from the Kraft Canada website. It calls for this to be grilled on a bbq...but we don't have one so I just used my skillets on the stove. Did the job just fine!!

*Let pans heat up.

*Place Chicken Breasts in a large container with a lid, or ziploc bag. Add half of the dressing to the container and shake to coat the chicken. It says to Refrigerate for 10 minutes before placing on grill..but I didn't do that.

*Add chicken to grill and let cook for 6 minutes.

*While that is cooking, Combine remaining ingredients in a bowl.

*Turn chicken over with cooked side up, top with tomato mixture and grill for 8 minutes or until Chicken is fully cooked through.

I served with a tossed Garden Salad and garlic bread. It was a success!

*New Recipe Adventure*

I've decided lately that we need some new things to try food wise that are appealing to our palates, but also nutritional enough to meet the needs of my growing toddlers.
I find (and I know so many people are the exact same) that I get into a funk some times with cooking and feel like we eat the same things over and over again week after week .

I'm determined to find new things to eat, and with that have decided that if I like something...I'll share it with you on here to try too. I'll make it, take a pic and post the ingredients. my goal is to at least try something new once a week, or add something new to what we've been eating.

So, here's to this new adventure ...wish me luck and enjoy reading about my experiences..and maybe even failures in the kitchen!

*Park*



March 20 2010 - we went to the park for a saturday play date with Krista, Steve and Kaiden. The weather wasn't very nice (overcast, and a few snow flurries) but we still had fun!

*Kids Got A Wagon*


This year I decided that we'd get a wagon. It's easier pulling them around, and with my doing daycare as well....there is room for all 3 kids together in this wagon. I got it for a great price, and it is a great ride for the kids!! We will have lots of fun with this!

Our park was more like a swamp then anything else -- so Caleb needed rain boots to keep his feet dry. .

*Apple Sauce Mess*

Yesterday we had a play date with my friend Amelia and her two kids. It was so nice that we took the kids to the park. I thought it would be wet..but I never thought some spots would totally fill the kids boots up with water. Needless to say the girls had a blast splashing in the puddles with their rain boots on .

B and her Friend Emma had fun in the puddles. They were wet right down to their undies after this adventure in the park. :-)

*Niagara Falls* - Part 2




*Niagara Falls* - Part 1



Steve turned the big 30 on Feb 20th 2010, so we decided that instead of having a big family party, we'd take the kids away to Niagara falls for a weekend getaway.

This was our first family trip as 4 (aside from up north for the summer) staying in a Hotel and we were very much looking forward to it. Except, the day before we were to leave -- both kids came down with a cold. We decided to still go, and we'd assess the situation if we needed to come home. Being out in the fresh air did them good..and although we did end up coming home a day early, we still had a blast.

The pictures of B looking out the window were in our hotel room...this was the view from out the window. The other pictures are from Ripley's Believe it or not, and when we were having dinner at the Rainforest Cafe.
